To go along with my Pan Roasted Chicken with Honey Thyme Sauce, I made these roasted green beans. It really highlights the crisp sweet nature of fresh beans and would be perfect to use with sugar snap peas too. If you need a new way to cook your fresh legumes with edible pods, this would be a wonderfully quick and delicious alternative.
Roasted Green Beans
* 1/2 pound fresh green beans (or sugar snaps)
* 1 tablespoon olive oil
* 1 tablespoon chopped onion
* 1 garlic clove, minced
* 1 teaspoon chopped fresh thyme
* 1 teaspoon chopped fresh parsley
* salt and pepper to taste
Preheat oven to 450 degrees F. Spread beans in a single layer on a medium baking sheet and drizzle with olive oil. Sprinkle with remaining ingredients. Bake 6 to 8 minutes in the preheated oven, until tender but firm.
