Tropical Fruit Salad

This is a healthy recipe that I use to curb my omnipresent sweet tooth during the afternoon slump or at the end of a meal when I just have to have something sweet. The kick of flavor from the ginger warms the belly while the crunch from the toasted coconut excites the palate. You could add any fruit that you have available in your kitchen. Whatever fruits you love will be accepted graciously in the orange and ginger sauce created in this dish. Get creative, be the maestro of your kitchen and celebrate the bounty of fresh fruits and vegetables starting their way back into our lives right now.

Tropical Fruit Salad

1 pint Strawberries, chopped in half

2 cups Mango, chopped

½ fresh Pineapple, cut into one inch squares

1/4 cup Toasted flake coconut

½ cup Mandarin oranges

1 cup Orange juice

3 tbsp Grated ginger

¼ cup Honey

Mix all ingredients together in a large bowl. Refrigerate.

  1. Fresh Fruit salad …. my favorite for breakfast – this with coco nut on top – will be next time. Ginger can be very overpowering, I have to see about that. Fantastic recipe … my friends when they stay with me always get fresh fruit salad for breakfast so next time there will be a twist to it.
