Zucchini Snack Squares

This recipe for zucchini snack squares is from my mother in law and is a family favorite. I make this a few times a year to give my husband a taste of home. A great way to use up any summer squash varieties with beautiful cheese and herb flavors mingling with the squash in snack cake form. Perfect for portable snacks or a great lunch on the go option.

  1. Zucchini, wonderful to use … this “bisquik” – don’t have a clue if we have that over here … but I found a recipe for home made … will try this.

    1. Thanks. I wasn’t sure if bisquik was international or not. Of course, as you know, watch out for the amount of salt. Probably wouldn’t put more than 1-1/2 tsp salt in the whole recipe, especially if you use salted butter. Hope this helps.

      1. Thanks a million … check on the net and I don’t think we have something like it over here. Have to make my own – found a recipe – will be careful with the salt — not a fan of salty food.

  2. what a great way to get veggies into my kids! they didn’t even see the summer squash in there. thanks for another tasty recipe!
