Okra and Tomatoes

Okra is one of those veggies that I grew up eating quite a bit of. A traditional dish is tomatoes and okra stewed together and served over rice. Simplistic in it’s most basic form, but this recipe raises the okra and tomato up by accenting them with a highly seasoned stock. Comforting with the tomatoes and okra giving their own unique earthy flavors built upon sunshine and heat! Give it a try today!

  • 4 slices bacon, diced into small pieces
  • 1 small onion, peeled and chopped
  • 2 cloves garlic, minced
  • 1 cup stock
  • 1 tablespoon sugar
  • 2 cups fresh okra, cut into 1-inch pieces
  • Salt and freshly ground black pepper
  • 1/4 tsp Cayenne
  • 1 cup chopped celery
  • 1 cup chopped green bell peppers
  • 1-2 cups tomatoes, peeled, seeded, and chopped
  • 2 bay leaves
  • 1 tsp paprika
  • 1/2 tsp thyme
  • 1/2 tsp oregano
  • Dash hot sauce
  • 4 cups cooked long-grain white rice, warm

Directions

Cook bacon slightly. Saute onion, celery, bell pepper, and garlic with bacon until tender. Add tomatoes, chicken stock, sugar, bay leaves, paprika, thyme, oregano, salt, pepper and hot sauce. Stir well and letsimmer for about 20 minutes. Adjust seasoning if needed. Meanwhile wash okra and remove fuzz if long and cut into pieces. Add the okra and simmer until okra is done, about 20 more minutes.

  1. So my southern farm bred boyfriend is DEEPLY opposed to smushy okra… I think his grandma may have boiled it one too many times when he was a kid. But your recipes are always so functional and lovely and he really loves all your salad dressings… so I’m wondering if I can sneak this meal in? Or will he turn his nose up at the sight lol? The only success I’ve had is putting very firm fresh okra into gumbo; he never slows down to pick it out. This looks so hearty and summery vegetable good. WANT.

    1. Yes, okra can get mushy and slimy, which is why I use fresh, cut into larger pieces and only throw it in for the last twenty minutes. The okra still will have resistence in its bite, like a green bean, etc…Don’t try to use frozen, if he hates mushy, just because freezing it breaks down the cell walls. I would say try it this way and if he hates it still, then he just isn’t an okra man.

  3. Love all this comfort food. Okra and tomatoes was one of my moms favorite dishes. I love fried okra. I miss it. I can’t grow it here. Have you ever tried pickled okra or okra with cream cheese and ham? I’m crazy about okra! BTW, thanks for visiting my blog and giving it a like.
