Sauteed Green Beans with Bacon and Shallots

I have always love green beans. Even the soggy ones that were served in the school cafeteria as a kid. These are so much better!

I love fresh green beans in any shape or form, but when you can mix them with bacon and caramelized shallots, I mean come on. It almost seems like I am cheating. I mean getting this much yummy flavor into something shouldn’t be this easy!

You get the sweet caramelized shallots bring out the sweetness of the green beans and the smoky saltiness of the bacon mixes well with the bites of ground pepper. The grassy-ness of the parsley brings out the fresh earthiness of the green beans while the lemon brightens the flavors, giving the meal a little zip.

Asian Green Bean Salad

Green beans are definitely one of my favorite foods that I wait to get fresh all year. Fresh picked green beans have an earthy sweetness that are absolutely magnificent. It reminds me of wearing sundresses barefoot in the garden with my dad, picking the low hung beans from the trellis that my dad welded together just for his crawling veggies and fruits. Dad called them pole beans, grandma called them string beans, but all I know is I love them.

Really you could serve green beans freshly steamed with a little sprinkle of salt and I would be in heaven, but of course I would have a few recipes up my sleeve for these guys. So enjoy the following recipe that I used to make at a cafe that I worked at years ago. It’s super simple, super quick, super cheap and super good!

Roasted Green Beans

To go along with my Pan Roasted Chicken with Honey Thyme Sauce, I made these roasted green beans. It really highlights the crisp sweet nature of fresh beans and would be perfect to use with sugar snap peas too. If you need a new way to cook your fresh legumes with edible pods, this would be a wonderfully quick and delicious alternative.
