Beer Battered Zucchini Fries

I love pretty much anything deep fried and beer battered. Yum! This is a recipe I have had in the mix for years.

You guys know my husband loves to make his own homemade batches of beer and together, we love to find ways to cook with it. Last night, my husband and I decided to make these beer battered zucchini fries instead of the standard french fried potato. I am very pleased with the result, deliciously crunchy coating with a perfectly cooked zucchini center. Yum!

Grilled Marinated Zucchini

Another zucchini recipe, I just love zucchini, such a versatile veggie. This one is so simple and tastes so yummy.

A few hours before your cookout, take out some of those zucchinis or squash that you don’t know what to do with, cut them up, toss with a simple vinaigrette. Then grill them until they get this yummy char on the outside. Mmmmm… I promise these guys will fly off the table at your next get together.

I have been back to the grind at work, but like I say, I like to stay busy. I’ve learned the alternative, not busy, isn’t good for my psyche, so Yoga practice has been my balance for the past few weeks.

The other night my Yoga instructor introduced me to Mary Oliver’s poetry and I wanted to share one poem with you:

I don’t think so.

I’m not sure.

It’s a very beautiful idea, to ask the question and to have a small picture answer and then the big picture answer. It seems to echo the pattern of my life, but it’s completely okay to just be no matter what mindset I am in that day. Anyway just wanted to leave you guys a little to marinate on. Chocolate Chip Zucchini Bread

Zucchini season is here and one of the items that I love to make annually is zucchini bread. Because my husband is a chocolate lover, I throw some chocolate chips in the batter for good measure. Out of love, I use the mini chocolate chips so that he can get the taste of chocolate spread evenly through out every bite. If you need a great way to use up zucchini this season, this is a great idea for not only a family treat, but bake sales and gifts for neighbors. Also, after the bread has baked, it freezes well, so you can always have a nice sweet treat ready to go for any pop over guests. Enjoy everyone!

Squash Casserole

With the days heating up, I am starting to see glimpses of summer already at the markets. To my delight, I was able to pick up zucchini and grey squash my last go round and make one of my favorite summertime dishes, squash casserole, for supper last night. This squash casserole could be consider a delicious side, but is filling enough to be a lovely vegetarian main dish option. Super simple and super delicious, enjoy!
