Roasted Fig Salad with Honey Lemon Vinaigrette

This week, I bought a carton of fresh figs from a roadside stand. Growing up, we had a fig tree out back, so I love the flavor of homemade fig preserves. This week, however, I didn’t have enough time, energy or figs to go through all the effort of making fig preserves, so I made a bright, cheery salad out of roasted figs, shaved cheese and tossed the greens with a honey lemon vinaigrette. Mmmm… magnificent!

Here is the recipe I followed, except I substituted the Gorgonzola for Parmesan because that is the cheese I had available. Enjoy everyone!

  3. Fig season is my favorite time of year! We’ve got three fig trees, but they’re babies, so they don’t produce much fruit, and when they do, the squirrels keep beating us to it! Maybe we’ll have some next year. :)

      1. That’s what I hear. At this point, I’ll be really happy if our 100-degree heat wave doesn’t kill my poor little trees. They’re looking really droopy these days….

  6. My mind is having a difficult time wrapping itself around “fig” and “salad.” However, if you have a recipe for fig preserves………….Actually, I guess I would have to have some figs, too. Why can I not find fresh figs here in California? Seems like the weather would be perfect for them.
